Corona inhabitants can now indulge in the latest food dive to hit the city: Pieology Pizzeria. This semi-fast food restaurant can be classified as the “Chipotle” of pizza. Customers can customize their own 10-inch pizza from the toppings, to the sauce, and everything in between.
The new place opened Tuesday, April 15, and already, the line for the dinner rush is out the door. But the 15-20 minute line to get to the counter is well worth the wait. One can start off with choosing the type of sauce and cheese; choices include: red sauce, herb butter, olive oil, mozzarella, parmesan, ricotta, and gorgonzola. Sometimes, however, workers may undercut the amount of red sauce, so more may given upon request.
Toppings offered cover a wide range from red onions, mushrooms, artichokes, tomato, garlic, and even jalapeños. Customers also have their choice of meat such as the classic pepperoni or more adventurous selections like ham and bacon.
All choices sit in metal bins for the pizza-crafters to pull at your request – although they seem to sit there for a while, items are constantly replaced and refilled to ensure quality freshness.
For the less adventurous, Pieology offers “one of [their] own” creations; there are seven different choices of pizzas to choose from that have a specific combination of sauce, cheese, and toppings. These choices feature timeless combinations including their “Classic Cheese Pizza” (with red sauce, mozzarella, and olive oil). Pieology even has a delicious BBQ chicken pizza and a spicy buffalo chicken pizza. The flavors of the BBQ pizza melt together in a fantastic blend, but it does not mask the distinct presence of BBQ and gorgonzola present in the creation.
Pieology’s #5, consisting of mozzarella, parmesan, tomatoes, fresh basil, garlic, and olive oil, is on the lighter side of the menu. With its refreshing taste, accompanied by a hint of garlic, it’s easier to devour the entire pizza without even realizing it.
After each pizza makes its way through the procession, they all enter a firebrick oven where they’re cooked directly on the rack. Each pizza comes out hot and steaming, and can either be brought to the table for dining in or packaged in a box to take out.
Other entrees include standard salads and breadsticks, which come glazed in either garlic sauce or sweet cinnamon for those who want a tasty treat.
The pricing is fairly decent, especially considering the size and rapid time in which their pizzas can be made. Prices range from $7-10, depending on the toppings/ type of pizza requested.
